WHere is a home-style interpretation of a cocktail from our latest menu. It's a large-volume premix which is bursting with the flavours of a festive period, which makes it perfect for hosting a celebration. Reserve the remaining citrus syrup to use in morning drinks, sweets, or to mix another batch of this cocktail.
Bikini Recipe
Serves 10 people
Ingredients for the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Cocktail (makes 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
For the Cordial: Combine all the ingredients inside a pan, bring to a simmer, mixing until the sugar dissolves. After that, turn off the burner allowing it to cool entirely. Pour into an sealable bottle, seal and store in the refrigerator, it will last for up to one month.
To make Premix: Combine the specified liquids into a sizeable container, allow it to infuse for an hour, then pass it through preferably using muslin, making it completely strained.
For serving: Pour 85ml of the premix into a mixing glass filled with ice, and stir lightly for one minute until cold. Strain into a cold coupe glass or similar, garnish with the cranberries and finish by giving it a quick spritz of the essential oil over the top.
